Pan para el fin de semana (16/12/2011)

Aquí está el pan para este fin de semana.  Estoy supercontenta con él porque ha salido muy bien en todos los aspectos, tiene una corteza crujiente, la miga suave y esponjosa y está riquísimo. 



Los ingredientes son los habituales de estos últimos panes y lo único que más o menos cambio es la combinación de las harinas.  Es que entre otras cosas no tengo tiempo de hacer muchos experimentos y voy a lo rápido y a lo que más o menos conozco.   Este pan lleva:  200 gr masa madre de centeno integral, 250 gr harina trigo integral ecológica Rincón del Segura, 250 gr de harina de trigo blanca de fuerza Allison, 360 gr. agua y 10 gr. de sal.

La masa madre la refresqué (50 gr de masa madre de centeno integral + 75 gr harina integral de centeno + 75 gr de agua) el miércoles por la noche y la dejé toda la noche a temperatura ambiente (en la cocina).   El jueves por la mañana, ayer, mezclé los 200 gr. de masa madre nuevos con el resto de los ingredientes.  Tapé el bol y lo dejé de nuevo en la cocina a temperatura ambiente.  Estuve desde las 7 de la mañana (que fué cuando lo mezclé, y no, no amasé) hasta las 5 de la tarde hora en que llegué a mi casa. 

Cuando llegué a las 5, lo primero que hice fué encender el horno a 250ºC con el turbo.  Luego formé el pan y lo dejé en el banneton mientras el horno se precalentaba.  Cuando el horno estuvo a 250º, quité el turbo y puse sólo el calor de la parte inferior del horno.  Greñé el pan y lo metí en el horno.  Acto seguido eché unos cuantos cubitos del hielo en la base del horno para crear vapor.  Dejé la masa del pan unos 10 minutos sólo con el calor inferior, pasado ese tiempo puse calor arriba y abajo y siguiendo a la misma temperatura (250º) lo dejé unos 20 minutos.  Cuando pasó este tiempo bajé la temperatura a 220º y dejé el pan otros 10 minutos más.



Cuando el pan se enfrió lo corté y me quedé encantada de ver el aspecto del interior y de la miga, muy muy esponjoso.  De sabor estaba también riquísimo.



This is my bread for this weekend.  I am super happy with it.  It is delicious.

The ingredients are more or less the same as in my other recipes.  I just don't have time right now to try anything new.  The only thing I am changing is the flour combination I use.  For this bread I have used:  200 gr. rye brown leaven, 250 gr. organic wholemeal flour, 250 gr strong white flour (Allison), 360 gr water and 10 gr. salt.

On Wednesday evening I put 50 gr. of rye leaven with 75 gr. wholemeal rye flour and 75 gr water in a bowl and let it covered on the kitchen counter the whole night.  On Thursday morning (before going to work), I mixed this leaven with rest of ingredients.  I didn't knead, just mixed.  I covered the bowl again and let in the kitchen from 7 a.m until 5 p.m, that was when I arrived home. 

First thing I did when I arrived home was to preheat the oven to 250ºC with turbo (I don't know if you say it like this).  Then I shaped the bread and let it in the banneton until the oven was hot enough.  When this happened, I made a cut on the bread and put it inside the oven.  I put the oven so it was hot only on the base of it.  I put also some ice to create steam.  I let it for 10 minutes.  After that I put the oven with the heat coming from the top and botton of the oven.  After 20 minutes I lowered the temperature at 220º and let the bread for 10 more minutes.  Then the bread was already done.

Yesterday, when the bread was cool, I cut it to have a slide for dinner and the inside of the bread was really soft and delicious.  As I said before I am really happy with it.
