Pan para el fin de semana (12/01/2012)

Tendría que haber puesto "panes" ya que son dos los que he horneado esta tarde.

Tenía masa de pan en el frigo desde ayer miércoles por la mañana, pero esta tarde, al sacar la masa del frigo he visto que no ha subido mucho a pesar del tiempo que llevaba.  Esto es la segunda vez que me pasa y no sé si es la harina nueva del Rincon del Segura que compré estas navidades y que no tiene mucha fuerza. 

Como tenía que dejar atemperar la masa a temperatura ambiente y tenía algo de tiempo he decidido hacer un pan de emergencia por si este fallaba.  Este claro está con levadura fresca para que me diera tiempo a hacerlo y hornearlo.

Al final tengo dos panes. Y aquí están:


Este primero es el de levadura.  Lleva 400 gr. de harina de trigo blanco, 100 gr. de harina blanca de espelta, 1 cucharada de masa madre de centeno integral (para dar algo de sabor extra al pan aunque no hubiese sido necesario), 10 gr. de sal, 10 gr. de levadura fresca y 325 gr. de agua tibia.  He amasado. Ha fermentado una hora. He desgasificado.  He formado y le he dejado entre media hora y tres cuartos de hora.  Horno a 250º durante los 20 primeros minutos.  He echado unos cubitos de hielo para formar vapor.  Cuando faltaban unos 15-20 minutos he bajado el horno a 220º.  Y aquí esta.  No lo he probado pero de aspecto está muy bien.



Este es el de masa madre.  Lleva 200 gr. de masa madre que refresqué la noche antes de mezclar la masa del pan.  Además lleva 150 gr de harina integral de trigo, 350 gr de harina blanca de trigo, 350 gr. de agua y 10 gr. de sal.  Como he dicho la masa después de día y medio en el frigorífico no había subido mucho, y eso a pesar del porcentaje de harina blanca de trigo que lleva.  Me dá la sensación de que la última harina de Rincón del Segura que pedí por internet estas navidades no tiene mucha fuerza. 

Hoy después de atemperarla, formar el pan y dejarla reposar uno hora más, fué al horno y ahora mismo todavía está la hogaza caliente.

Creo que me quedaré con la mitad de la hogaza y la otra mitad y el de levadura irán mañana para casa de mis padres.  A mi padre le gusta más el pan que lleva levadura ya que suele tostar mejor que el de masa madre.



This afternoon I baked these two breads.  First one was made using fresh yeast and second was made with leaven.

I had in the fridge dough with leaven but I noticed that it hadn't grow as much as other times.  I wasn't sure about the result with this dough.  As I had enough time I decided to make more dough using fresh yeast. 

Ingredients for the first loaf are:  100 gr. spelt flour, 400 gr. white flour (this one I think it is not too strong), 325 gr of a bit warm water, a spoon of rye leaven, 10 gr salt and 10 gr. fresh yeast.  I kneaded it a bit.  I let it covered for an hour.  Then I kneaded a bit again to get rid of the gas from the yeast.  I formed the loaf and let it covered for half an hour or so.  Oven at 250º the first 20 minutes and at 220º the last 15 minutes. When I put the loaf inside the oven I put also some ices on the bottom of the oven to create steam.

Ingredients for second loaf are:  200 gr. brown rye leaven, 350 gr. white flour, 150 gr wholemeal flour, 10 gr. salt and 350 gr. water.  As I said before I think the white flour I bought recently is not very strong because I notice that after a day and a half the dough was not as high as other times.  Anyway here it is.  I did as other times.

They are both still hot.  Tomorrow I will probably take the first one and half of second loaf to my parents home.  My father likes bread done with fresh yeast better than the one I make with leaven.  I prefer the one with leaven because it is even good after four or five days and because it is healthier.
